The not so famous five dishes of Dutch cuisine

My wonderful readers, I’m afraid that it’s time for another Dutch phrase of the week. For expats, there are many ways to integrate with our denim loving hosts. Yes, language is key, as is doe maar effe normaal! But to really understand the Dutch, you’ve got to have a good grasp on the food that they love, which brings me to the subject of today’s post, Dutch Cuisine the Not so Famous Five Dishes.

I’ll focus on five dishes that like the majority of Dutch actors and actresses, aren’t particularly well known outside of Belgium and the Netherlands, (yes I’ve heard of Hollands only famous woman Carice van Houten)  but are nevertheless loved and adored by the brown shoe wearing and wet-haired masses that populate this country.

This post will teach you how to shock the locals with your in-depth knowledge of the top five dishes loved by locals. In fact, if while cycling, you’re stopped by plainclothes Dutch customs agents in Amsterdam, due to behaving like a typical bloody foreigner for stopping to allow pedestrians to cross. You can say to them, “sorry officers, maar ik heb nu echt zin in vlaflip, kan ik gaan?”

Now this post might annoy some, and if as a result I’m captured by a bunch of angry Dutch chefs and am forced to endure a lecture of how much the Dutch kitchen has improved in the last twenty years, I’ll say to my enemies “stop your whining and get back to the friteuse.”

Naast klassiekers zoals bitterballen, en stamppot, zijn er nog een aantal Nederlandse specialiteiten die de moeite waard zijn om te vermelden. Tevens is dit een weer een perfect moment om je vocabulaire uit te breiden zodat je weer een goede beurt kunt maken op je werk, bij je schoonfamilie of bij je vrienden.

1. De vlaflip

Een typisch Nederlands toetje met een ietwat oubollig karakter. Je zou voor de grap een keer kunnen vragen in een wat duurder restaurant of ze naast crème brûlée ook vlaflip hebben. Dan begrijp je pas echt hoe erg de Nederlander de vlaflip associeert met hoogpolige oranje tapijten, bruin behang en muziek van Rob de Nijs*.

In fact, if you believe the story that explains why Zwarte Piet is the colour he is, then Dutch chimneys are lined with chocolate flavoured vla.  Just watch the TV ads on Dutch TV. Every second bloody advert is for vla. The Dutch go crazy for it. In fact, vla related violence is a common problem in supermarkets when demand outstrips supply and there are only a few left. With their usual creativity and sense of innovation, the Dutch have developed vlaflip and it represents the pinnacle of Dutch cuisine.

The next time you’re at a Michelin star establishment, ask the waiter if they have vlaflip on the menu. His shocked reaction should keep you smiling for days afterwards.

Neme een hoog glas (liefst doorzichtig) en daar giet je dan een laagje limonade in. Daar bovenop komt weer een laag vanillevla en dat top je af met een laag yoghurt. De echte zoetekauw mietert er ook nog een laag hagelslag bovenop. Smullen maar!

Invented by the famous Dutch chef, Jan de Vies, holder of three michelin stars and a guide dog, the incredibly multilayered recipe is as follows:

  1. Fill a third of a glass with lemonade
  2. Add some vla (flavor of your choice)
  3. Top up with some yoghurt
  4. Put on the menu and wait for a bunch of blue haired old ladies to storm your establishment demanding vlaflip
  5. With the money, buy a holiday home in France but make sure that you pack only Dutch food in your car and take enough with you to survive your time on holiday. Success!

2. Joppiesaus

Deze uitermate verfijnde gele saus is verkrijgbaar is in diverse cafetaria’s in Nederland en België. De saus wordt meestal gegeten bij friet en hamburgers. Hij werd ontwikkeld door de uitbater van een cafetaria te Glanerburg in Twente. Het echte recept is geheim maar er gaan geruchten dat de saus uien, suiker, kerrie en mayonaise bevat. De populariteit van Joppiesaus bereikte een hoogtepunt toen deze smaak als winnaar uit de bus kwam bij een maak de smaak-competitie van chipsfabrikant lays. Deze smaak bleek een blijvertje en maakt nu onderdeel uit van het chipsassortiment. Ben je benieuwd naar joppiesaus? Je kunt voor 3,99 een grote fles kopen bij de Albert Heijn. Joppiesaus is een soort ketchup. Het maakt zelfs het meest ranzige eten nog enigszins eetbaar.

Proof of how refined the Dutch language really is. Just say joppiesaus out loud. What a lovely word, it just rolls off the tongue. In fact, here’s a tip to my expat readers who might be embarking on a Friday night Tinder flirt chat with a Dutch person. Just say, “Op je profielfoto ben je nog lekkerder dan joppiesaus, en ook niet zo vet.” They’ll be like drop in your hands. (Leftover drop in your trouser pockets that’s gone warm and sticky).

Joppiesaus actually has a secret recipe. It’s slapped on hamburgers and fries (or if you speak proper English, chips!). The Dutch love it so much that it was voted in a make the flavour competition for crisps maker lays. It’s now a firm part of the selection, so for those food connoisseurs amongst you, I suggest that you go out and eat a burger with chips, smothered in joppiesaus, then buy a packet of crisps to compare the subtleties of this refined sauce.

This flavour is in fact so popular, that brothels up and down the country even offer the option to have the hard-working bed-bound entrepreneur of your choice, covered in joppiesaus. This is known as the Joppiemetdutchie option.

3. Tompoes (of voor de chique Nederlander: tompouce).

Dit lekkernij schijnt voor het eerst gemaakt te zijn door een banketbakker in Amsterdam. Dit Hollandse gebakje bestaat uit een laagje bladerdeeg met daaroverheen een dikke laag vanillebanketbakkersroom. Daaroverheen zit weer een laagje bladerdeeg bedekt met een laagje glazuur. Tompoezen zijn normaal gesproken roze behalve als het Nederlands elftal speelt of als het Koningsdag is want dan zijn alle tompoezen opeens oranje en dan lijkt Nederland ook opeens massaal tompoezen te eten.

Probeer dit gebakje absoluut een keer uit maar niet voordat je dit filmpje hebt gekeken. Vervolgens kun je indruk maken op je vrienden en familie omdat jij- als expat nota bene- het geheim van het eten van de tompoes kent. Eet smakelijk en veel succes!

This pinnacle of Dutch pastries was invented in Amsterdam and is more commonly used by the Dutch intelligence services to torture people suspected of fighting in Syria for ISIS. If you’d like to impress your Dutch in-laws, bring some tompoes along with you to dinner. They’ll be impressed by your chic and cosmopolitan ways, and will from that point only criticise you behind your back instead of to your face. Peace in our time.

4. Kapsalon (new Dutch cuisine)

Een relatief nieuwe Nederlandse snack wat nog maar twaalf jaar bestaat. Ik denk dat dit gerecht ook de prijs verdient voor meest ranzige Hollandse snack ooit. In een kapsalon zitten ongeveer 1800 calorieën en het geheel ziet er niet erg aantrekkelijk uit. Een kapsalon is een bak friet bedekt met shoarma, afgetopt met gesmolten Goudse kaas en daarbovenop komt nog een lekkere klets knoflooksaus en/of sambal en voor de nodige vitamientjes een beetje ijsbergsla.

De geestelijk vader van het gerecht is de Kaapverdische eigenaar en tevens kapper van kapsalon Tati in Rotterdam. De beste man liet dit gerecht vaak samenstellen bij shoarmatent El Aviva bij hem om de hoek. De eigenaars doopten het gerecht om tot een ‘kapsalon’ en zetten het op de kaart. Tot grote verbazing van velen, werd dit gerecht zeer populair. Tegenwoordig is het in heel Nederland te krijgen.

Well if you want them out of your life, what better way than to start feeding them the newest and incredibly popular dish of Dutch cuisine, the kapsalon. 1800 artery lining calories. Yes like a group of Dutch sorority ladies, dressed up for a ball, and painfully staggering on their high heels like newly escaped plofkip learning to walk for the first time, it doesn’t look good. But like telling foreigners to go back where they came from in an argument, the Dutch love it!

Naturally, it’s fried. It has chips, and it contains shoarma, which was made popular by Boy George in his classic song shoarma, shoarma, shoarma chameleon, red gold and green, red gold and green.

5. Wentelteefjes

Nederlandse kinderen zijn vaak dol op wentelteefjes terwijl het eigenlijk voedsel was voor de ‘armelui’. Het werd vaak gemaakt om oud brood niet weg te hoeven gooien. Het gerecht maak je door oud brood te dopen in een mengsel van melk eieren, suiker en kaneel. Het brood bak je vervolgens in een pan in een dikke laag boter. Na het bakken is het brood niet meer taai wordt de muffige lucht enigszins gemaskeerd door de suiker en de kaneel. Ja, de Nederlander weet wel hoe hij geld moet besparen! De jeugd van tegenwoordig zal het ‘echte’ wentelteefje niet vaak meer proeven. Hun wentelteefjes zullen vooral gemaakt zijn met glutenvrij, paleoproof, veganischtisch speltbrood. De naam wentelteefje is trouwens best wel vreemd. Wentelen betekent omdraaien. Dit is logisch in de context van het wentelteefje omdat je de stukken brood omdraait in de pan. Het woord teefje betekent ‘vrouwenhond’ en is net als het Engelse bitch ook een onvriendelijke benaming voor een vrouw. Over de etymologie zijn de wetenschappers nog niet helemaal uit.

Wentelteefjes, is nothing more than French toast by another name. Kids love it, which means that naturally so do adults. Simply use old bread, milk, eggs, sugar and fry the bread to your hearts future cardiac arrest.

Wentelteefjes is an odd name. Wentel means to turn. Teefjes means female dog (bitch), all of this is irrelevant, just fry and die (sooner rather than later) as that will be the result of eating too many servings of this calorie-laden dish.
